First founded in 1875, Kagamiyama Shuzo (@koedokagamiyama) was once part of Kawagoe’s proud brewing tradition. After closing in 2000, the brewery was thought lost—until its revival in 2007, led by a younger generation determined to carry that history forward. Today, Koedo Kagamiyama stands as the only sake brewery in Kawagoe, Saitama.
Just an hour northwest of Tokyo, Kawagoe is known as “Koedo” (Little Edo) for its preserved Edo-period charm. Building on that heritage, Koedo Kagamiyama works closely with local farmers to cultivate Sake Musashi, a rice variety unique to Saitama Prefecture—linking centuries of tradition with a fresh vision for the future of sake.
Because new sake brewery licenses in Japan are nearly impossible to obtain, a revival like this is truly rare.
For this one-night dinner, Chef William Eick (@chefwilliameick) presents six courses with sake poured by Mr. Igarashi, the president who brought Kawagoe’s brewing tradition back to life.
